l is for lemon chicken


This recipe is so easy and really good. It's a great one to serve to little kiddos. We just have it with rice and a vegetable and dinner is done. This recipe is from my Taste of Home cookbook.


Baked Lemon Chicken

3 Tbsp. butter
2 Tbsp. lemon juice
1 garlic clove
1/2 tsp. salt
1/4 tsp. pepper
1/2 cup seasoned bread crumbs
4 boneless skinless chicken breast halves (about 1 1/2 lbs.)

In a shallow dish, combine the butter, lemon juice, garlic, salt, and pepper. Place bread crumbs in another dish.
Dip chicken in butter mixture, then coat with crumbs. Place in a greased 13x9x2 in. baking dish. Drizzle with the remaining butter mixture.
Bake, uncovered at 350 for 25-30 minutes or until juices run clear.

  1. Where do you buy bread crumbs at the grocery store? I can never find them. I use crushed ritz crackers instead, but I'm sure recipes would taste a lot better if I could find those darn bread crumbs:)

  2. Good question... I'll look next time I go, but in my mind they are near the other baking supplies like flour and cornmeal. I am pretty sure that's where they are in Walmart. They are in little cannisters, like mini versions of the ones oatmeal comes in. Hope that helps!
